Burrito Bowls

Burrito Bowls

An easy and delicious meat free weeknight meal.

Ingredients

1/4 cup brown rice per person

2 cloves of garlic, diced

Extra Virgin Olive oil

1/2 packet Mexican spice mix

2Tbsp tomato paste

1 can crushed tomatoes

1 can black beans or kidney beans

1/2 carrot, grated

Handful of grated cheese

Fresh salsa:

Handful of cherry tomatoes, chopped fine

1/2 red onion, finely chopped

1 avocado, cut into small pieces

1 lemon

Handful of coriander, roughly chopped

Plain unsweetened yoghurt to serve

Method

  1. Cook rice

  2. Heat oil in a oven proof fry pan/pot on med - high heat and add garlic. Fry for a few minutes

  3. Add Mexican spice mix and tomato paste and cook for 2mins until fragrant

  4. Add tinned tomatoes, beans, and carrot. Simmer for 5-10minutes

  5. Whilst the bean mix is cooking, make the fresh salsa and check on the rice

  6. Once bean mix has reduced, sprinkle cheese on top and add to the oven to grill

  7. To serve, add brown rice to a bowl, followed by fresh salsa and yoghurt
