Easy Veggie Pasta

Ingredients

Easy Veggie Pasta

A super easy yet tasty weeknight (or weekend!) meal. Great for leftovers too.

Any type of pasta

2 cloves garlic, crushed and cut small

1 broccoli, cut into small florets

250g button mushrooms, sliced

2 handfuls of baby spinach (half a bag)

1 can of crushed tomatoes

1 can of brown lentils, drained and rinsed

1 cup grated edam cheese

Optional toppings: pumpkin and sunflower seeds

Method

  1. Boil pot of salted water and cook pasta.

  2. Chop vegetables.

  3. Heat extra virgin olive oil in a fry pan on medium - high heat.

  4. Add garlic, broccoli and mushrooms to the fry pan and cook until broccoli is just cooked (i.e. still a little crunchy).

  5. Add spinach and cook until it wilts.

  6. Add crushed tomatoes and lentils to the vegetables and simmer for 1-2 minutes.

  7. Drain cooked pasta and add to the fry pan with vegetables and tomato sauce. Stir in edam cheese.

  8. Serve and top with seeds if using.
