Green Pesto Pasta

Who ever said pasta couldn’t be healthy? This recipe is packed full of veggies and is such as yummy meal! If you want to add a little extra fibre, or make it gluten free choose pulse pasta instead of regular pasta.

Ingredients:

1 packet of regular or pulse pasta (our favourite is by San Remo)

1 brown onion diced

1 garlic clove diced

250g mushrooms sliced

1 broccoli cut into small florets (including stalks chopped)

Handful of spinach

1 tin of brown lentils (rinsed)

1 small pesto dip

Juice of one lemon

Handful of grated edam cheese

Roughly chopped almonds

Method:

  1. Cook pasta as per packet instructions

  2. Heat olive oil in a fry pan on medium-high heat.. Add garlic and onion and cook until soft

  3. Add broccoli and mushroom and fry until cooked

  4. Once pasta is cooked, drain and add to a large serving bowl

  5. Add broccoli and mushrooms to the pasta once cooked. Also add spinach and lentils

  6. Stir through pesto, lemon juice and grated cheese

  7. Toast almonds in a hot pan, and sprinkle on top prior to serving
