Teriyaki Salmon with Asian Greens

A super quick yet nutritious week night meal.

Serves two

Ingredients

1 cup brown rice or quinoa

2 salmon fillets

2 cloves garlic

2cm ginger

1tsp sweet chilli

1/4 cup soy sauce

1 broccoli

2 bok choy (chop ~5cm of the white end of stalks off)

Sesame seeds to top

Optional: Kewpie mayonnaise

  1. Cook rice or quinoa

  2. Preheat oven to 200deg, bake

  3. Line an oven tray with baking paper and place the two salmon fillets on the tray

  4. Finely chop ginger and garlic and add to a bowl, along with soy sauce and sweet chilli. Mix well. Pour overtop of the salmon, saving any remaining marinade

  5. Bake salmon for ~10min (depending on thickness of the fillets). Keep and eye on it

  6. Chop the broccoli into florets, and steam over rice just before the rice is cooked. Add the bok choy at the end to steam.

  7. Once everything is cooked, assemble the dish by placing rice on the plate, followed by greens, and salmon. Drizzle any remaining marinade overtop and sprinkle with sesame seeds.
