Cheesy Black Bean Tacos

Cheesy black bean tacos

This recipe is such a crowd pleaser and packed full of fibre! It’s also a tasty and easy meat free dinner option the whole family will enjoy.

Ingredients:

1 onion, diced

2 cloves of garlic, diced

1/2 - 1 Mexican spice mix sachet

2 x cans of crushed tomatoes

1 Tbsp tomato paste

1 can of black beans (drained & rinsed)

1 carrot, grated

Handful of grated edam cheese

Tacos, burritos or wraps

Fresh salsa:

1 yellow capsicum, diced

3-4 tomatoes diced

1 red onion, diced

Juice of 1/2 lemon

Chipotle ‘sour cream’:

1/4 cup plain unsweetened yoghurt

1 Tbsp chipotle or hot sauce (OR 2Tbsp of Mexican spice mix)

Juice of 1/2 lemon

Method:

  1. Fry onion and garlic in a fry pan. Once softened, add mexican spice mix and cook for 1-2 minutes until fragrant

  2. Add tinned tomatoes, tomato paste, black beans, grated carrot, and zuchinni. Simmer for 10 minutes until bean mix thickens slightly

  3. In the meantime, chop salsa ingredients and add to a bowl. Squeeze lemon juice over salsa

  4. Mix chipotle ‘sour cream’ ingredients

  5. Heat tacos in the oven or microwave

  6. Once bean mix is cooked, sprinkle cheese on top. If you have an oven proof dish, transfer the bean mix to the oven to grill the cheese, or just add the cheese to the hot bean mix on the stove top and it will melt.

  7. Serve will the fresh salsa, tacos, and chipotle ‘sour cream’. Enjoy!
