Teriyaki chicken (or tofu) bowl

This recipe is sooo tasty and super easy and fast to make! You can sub out the rice for soba or rice noodles if you prefer.

Ingredients:

2 cloves of garlic, diced

3cm piece of ginger, diced

2 Tbsp sweet chilli sauce

Juice of 1/2 lemon

1/4 cup soy sauce

2 chicken breasts, diced, OR tofu

1 cup brown rice

1 carrot, sliced

1 capsicum, sliced

2 spring onions, chopped

Bok choy, sliced

1/4 purple cabbage, thinly sliced

Optional: Kewpi (Japanese) mayonnaise to serve

Method:

  1. Make the marinade by mixing ginger, garlic, sweet chilli sauce, lemon, and soy sauce in a bowl.

  2. Put chicken or tofu in the marinade, and leave in the fridge for at least 30min, and even overnight (if you’re that well prepared!).

  3. While the protein in marinading, cook the brown rice in a pot.

  4. Chop salad ingredients.

  5. Cook chicken or tofu in a fry pan on a medium to high heat.

  6. Place all ingredients in a bowl and drizzle mayonnaise overtop if using.
