Falafel Pita Pockets

This recipe is quick and easy and so delicious! A great recipe for the whole family. For those that are being carb aware, you may want to opt out the pita pockets and eat the dish as a falafel & bulgur wheat salad instead.

Ingredients

1/2 cup bulgur wheat

1 pre-made falafel mix*

1 red onion diced

1 capsicum cubed

Handful of spinach

Handful of cherry tomatoes chopped

1/2 packet of feta cut into small cubes

Squeeze of 1 lemon

Wholemeal pita pockets

1/4 cup beetroot hummus

1/4 cup plain yoghurt

Method

  1. Cook bulgur wheat by placing it in a bowl of boiling water with a pinch of salt for 10 minutes until soft

  2. Heat oil in a fry pan on a high heat. Spoon falafel balls into patties and fry for ~5minutes on each side until crispy and cooked through. Transfer to a plate lined with a paper towel

  3. While the falafel is cooking, chop salad ingredients and feta and add to a salad bowl.

  4. Add bulgur wheat to the salad once cooked, and drizzle lemon through the salad

  5. Toast the pita pockets briefly until warm and slightly crispy

  6. To serve: spread beetroot hummus and yoghurt into pita pocket, and add the salad and falafel patty

*If you are short on time then pre-made falafel mixes are a great option such as the ones by Lisa’s or Turkish kitchen. You can find these in the chilled section usually beside the salami’s/hams/dips and cheeses. If you’re feeling up to it and have a bit more time then making your own falafel is easy and great fun.
