Homemade Fish and Chips

You can’t beat homemade fish and chips. They’re actually so easy and quick to prepare (probably the same amount of time as waiting for your fish and chip order!). What we love is you feel so much better after eating homemade fish and chips compared to store brought fish and chips. We usually source our fish from a local fish shop or markets. Enjoy!

Ingredients

2-3 medium kumara cut into long skinny fries

Olive oil

1tsp ground cumin

1tsp ground coriander

1 fish fillet per person

1 egg lightly beaten in a cup/mug

1/4 cup breadcrumbs

Zest of one lemon

Handful of chopped Italian parsley

Salad:

2 handfuls of greens e.g. spinach, rocket

1 beetroot grated

1 carrot grated

Handful of cherry tomatoes cut in half

1/2 cucumber cubed

2-3Tbsp sunflower or pumpkin seeds

Ingredients for any of the salad dressings here

Method

  1. Preheat the oven to 200deg on bake

  2. Cut kumara and put in a lined oven dish. Sprinkle herbs and drizzle olive oil. Bake for ~20minutes or until cooked.

  3. Prepare the fish: pat dry fish with a paper towel. On a plate, mix breadcrumbs, lemon and Italian parsley.

  4. Dip the fish into the beaten egg to cover, and then transfer to the breadcrumb mix to coat fish in crumb. Place fish fillets on a lined baking tray.

  5. Add the fish to the oven half way through the cooking of the kumara (the fish should take around 10 minutes).

  6. Prepare the salad and dressing
