Summer Asparagus Salad

This salad is so simple, yet so tasty. Don’t worry too much if you don’t have the dukkah, but it does add extra flavour and crunch. It’s a real winner to take to a BBQ to have on it’s own or alongside meat.

Ingredients

Extra virgin olive oil

1 bunch of asparagus, ends removed

2 cloves of garlic, crushed and diced

1/2 bag of greens (spinach, mesclun, lettuce)

3-4 radish, sliced thinly

1 punnet of cherry tomatoes, cut in halves

2-3 Tbsp of dukkah (any flavour)

~2Tbsp mixed toasted seeds to top if you’ve got them (sunflower, pumpkin, sesame, flaxseeds)

Juice of 1 lemon

2-3Tbsp olive oil

Method

  1. Heat the olive oil and garlic in a fry pan

  2. Add asparagus and cook until still slightly crunchy. Take off the heat and allow to cool.

  3. Add greens, radish, and cherry tomatoes to a salad bowl or plate. Add the asparagus once cool too.

  4. Sprinkle the dukkah and seeds through the salad, and pour the lemon juice and olive oil just before serving.
