Plant Packed Quesadillas

Plant Packed Quesadillas

These are so yum and easy to make! They’re a great way to use up the last bits of leftover veggies too. If you’re looking to eat more plant based meals, this recipe is a fun and yummy great start to your journey.

Ingredients

1 brown onion, diced

2 garlic cloves, diced

Handful of mushrooms, sliced

1 courgette, grated

1 carrot, grated

1/2 capsicum, sliced

1 cup corn (fresh, frozen, or canned)

1tsp ground cumin

1tsp ground paprika

1Tbsp tomato paste

1 can black beans (drained and rinsed)

Handful of grated edam cheese

Packet of small tortilla wraps

Guac: avocado, red onion, lemon

Plain yoghurt to serve

Method

  1. Fry the onion in olive oil for 3-4 minutes or until soft

  2. Add the garlic and all of the vegetables and fry until cooked

  3. Add the paprika and cumin and cook for another minute

  4. Stir through tomato paste and black beans

  5. Set bean mix aside and make the guac

  6. Assemble quesadilla: sprinkle grated cheese on the bottom wrap, followed by a layer of the veggie bean mix, and a another sprinkle of cheese. Place another wrap on top.

  7. Heat a little oil in a fry pan on med heat and place the quesadilla in the pan. Cook for ~2min on each side or until golden.

  8. Serve with guac and plain yoghurt.
