Vegetarian Sausage Rolls

Vegetarian sausage rolls

These taste so much better than meat sausage rolls, and are a lot healthier too! A great option for a work shared lunch or morning tea.

Ingredients

1 garlic clove chopped finely

1 brown onion diced

1 carrot grated

1 apple grated

250g mushrooms diced into small cubes

1 can of brown lentils (drained)

2 sticks of rosemary, chopped

3/4 cup breadcrumbs

4 sheets flaky puff pastry

1 egg (or milk)

Sesame seeds

Method:

  1. Finely dice garlic, onion and mushrooms

  2. Grate carrot and apple and squeeze excess water out (otherwise you’ll end up with soggy sausage rolls!)

  3. Fry garlic, onion, carrot, mushroom and apple in a little oil until cooked.

  4. Transfer cooked vege to a bowl. Add brown lentils and breadcrumbs, and mix well.

  5. On a floured surface, roll pastry sheets thin.

  6. Shape filling into a log across the pastry. Keep 2cm free on either side.

  7. Roll into a log and have 2cm overlay of pastry.

  8. Place on a lined baking tray and brush with egg wash, sprinkle with sesame seeds.

  9. Bake for 20-25min or until pastry is golden brown.
