Halloumi Salad

Halloumi Salad

This is one of our go to salad recipes, so fresh and tasty. You really can put whatever salad veggies you have in the pantry.

Ingredients

1 cup quinoa

1 block of halloumi, sliced

Handful of cherry tomatoes cut in halves

3 radishes thinly sliced

1/2 yellow capsicum

1/2 broccoli head, sliced into small 1cm pieces (stalk included)

2 zucchinis cut into ribbons using a potato peeler

2 cups / handfuls of cos lettuce or spinach

1/4 cup sunflower seeds

1/4 cup pumpkin seeds

Dressing:

3Tbsp olive oil

1Tbsp balsamic vinegar

1/2 tsp wholegrain mustard

Method

  1. Cook quinoa in a pot as you would rice

  2. Cook halloumi in a hot fry pan

  3. Chop salad ingredients and add to a bowl

  4. Once halloumi has been removed from the pan, add the seeds to toast until slightly prown and pumpkin seeds begin to pop

  5. Mix dressing ingredients together

  6. Add quinoa to salad bowl and top with mixed seeds and dressing
