Nutty Muesli

Ingredients:

  • 3 cups wholegrain rolled oats*

  • 1 cup almonds (roughly chopped) 

  • 1 cup pumpkin seeds 

  • 1 cup sunflower seeds 

  • 1/2 cup Brazil nuts (roughly chopped in halves)

  • 3Tbsp honey 

  • 3-4Tbsp neutral oil (I use olive oil but you can use melted coconut oil too)

  • 1 cup dried diced apricot

  • 1 cup coconut flakes/ shredded coconut 

  • *for Gluten free replace oats with rice puffs and quinoa puffs

Method:

Preheat oven to 180 degrees on bake.

Mix dry ingredients in a big bowl. Don’t add dried fruit or coconut yet.

Melt honey in the microwave or on a stove top and mix with oil. Pour onto the muesli mix and massage it in with your hands.

Spread the muesli on a baking tray lined with baking paper and bake for around 10min or until browned and toasted. Check part way through and give the muesli a mix around.

Once the muesli is out of the oven add dried apricot bits and coconut flakes and mix.

Leave the muesli to cool down then store in a jar or Tupperware container

Serve with yoghurt and berries. Yummm 

PS, get your ingredients from your local bulk store and it can be cheaper
